6-Minute Microwave Caramel for Popcorn

Ingredients


  • 1/4 cup (1/2 stick of butter)

  • 1/8 Tsp. Salt; 1/2 Cup Light Brown Sugar; 1/2 Cup white Sugar; 1/2 Cup Light Karo Syrup; 1/2 Cup Sweetened Condensed Milk

  • 2 Teaspoons of Vanilla

Directions

  • Melt 1/4 cup (1/2 stick of butter) in a 4 Cup Pyrex measuring bowl (the caramel rises when it is cooking, so you have to use a microwavable container with high sides)
  • Add to melted butter: 1/8 Tsp. Salt; 1/2 Cup Light Brown Sugar; 1/2 Cup white Sugar; 1/2 Cup Light Karo Syrup; 1/2 Cup Sweetened Condensed Milk
  • Stir and Microwave 2 minutes; Stir and Microwave 2 minutes; Stir and Microwave 2 Minutes
  • Remove and add 2 tsp. of Vanilla and Stir
  • Pop your corn while the caramel is cooking in the microwave. I make two poppers. I still use a Presto Stirring Popper
  • It’s a good idea to have two large pans. Shake down the popcorn in one so the unpopped kernels go to the bottom of the pan; then carefully move the popped corn into other pan, leaving the unpopped kernels to throw out. Make sure your popped corn is in a large bowl or pan to pour the caramel over and mix to cover.
