Ingredients

  • 1/2 Stick of Butter

  • 1/8 Tsp. Salt; 1/2 Cup Light Brown Sugar; 1/2 Cup white Sugar; 1/2 Cup Light Karo Syrup; 1/2 Cup Sweetened Condensed Milk

  • 2 Teaspoons of Vanilla

Directions

  • Melt 1/4 cup (1/2 stick of butter) in a 4 Cup Pyrex measuring bowl (the caramel rises when cooked so you have to use a microwavable container with high sides)
  • Add to melted butter: 1/8 Tsp. Salt; 1/2 Cup Light Brown Sugar; 1/2 Cup white Sugar; 1/2 Cup Light Karo Syrup; 1/2 Cup Sweetened Condensed Milk
  • Microwave 2 minutes, stir; Microwave 2 minutes, stir; Microwave 2 minutes
  • Remove and add 2 tsp. of Vanilla and Stir
  • Pour the caramel in an 8 X 8 dish (lined with parchment paper and sprayed with olive oil)
    WARNING:
    NEVER USE WAXED PAPER BECAUSE IT STICKS TO THE CARAMEL!
    When the caramel sets up take the paper with caramel and turn it onto a cutting board. Cut caramel in 1 inch squares then wrap in pieces of parchment paper that have been cut to fit, wide & long enough to cover the piece and to twist the ends. Best if kept in the refrigerator before serving.
