Chocolate/Caramel Oatmeal Bars

Ingredients
2 1/2 Sticks of Butter ( melted)
1 Cup Light Brown Sugar
2 Cups Flour
2 Cups Quick Oatmeal
1 Teaspoon Soda
1/2 Teaspoon Salt
Directions
- Mix all ingredients together; press 1/2 of the mix into the bottom of a 9 X 13 pan that has been sprayed with Extra Virgin Olive Oil
- Bake 10 Minutes at 350 Degrees
- Remove from oven and sprinkle with 12 oz. pkg. of Nestle’s Semi-Sweet Chocolate Chips or, if you prefer, dark chocolate chips ( You can use 1 1/4 packages because the dark chocolate only says 10 oz/pkg. Semi-Sweet Chocolate Chips used to be 12 oz)
- Pour Caramel over the chips. * (Recipe for the caramel below.)
- * 6-Minute Microwave Caramel
Melt 1/4 cup (1/2 stick of butter) in a 4 Cup Pyrex measuring bowl (the caramel rises when cooked so you have to use a microwavable container with high sides) Add to melted Butter: 1/8 Tsp. Salt; 1/2 Cup Light Brown Sugar; 1/2 Cup white Sugar; 1/2 Cup Light Karo Syrup; 1/2 Cup Sweetened Condensed Milk……Stir and Microwave 2 minutes; Stir and Microwave 2 minutes; Stir and Microwave 2 Minutes. Remove and add 2 tsps. of Vanilla and stir. - Crumble through your hand as you sprinkle the other 1/2 of mixture over the top and bake for another 20 minutes. Let cool before cutting into squares.
- Cover and refrigerate until serving!
