Ingredients

  • 1 Whole Butternut Squash

  • Olive Oil Spray (EVOO)

  • Butter & Salt

  • Brown Sugar

Directions

  • Wash and cut in half, lengthwise
  • Place on a cookie sheet, lined with parchment paper & sprayed with olive oil
  • Place squash, cut side up and spray the top of each half with EVOO
  • Bake @ 400 degrees for 60 minutes
  • Scoop out all of the cooked squash and keep to make squash bread or spoon in small dishes, as a serving side heated with butter, salt, brown sugar (if you like)
  • See Pumpkin Bar Recipe for recipe. I used 2 cups of butter nut squash as a substitute for pumpkin. They were wonderful!
